Gemelli With Summer Vegetables
Ingredients:
- 1 box Mamarella Gemelli pasta
- 2 zucchini; sliced into 2" julienne strips
- 4 cups grape/cherry tomatoes; sliced into quarters
- 1/2 cup red onion; minced
- 1 yellow bell pepper, sliced into 2" julienne strips
- 2 garlic cloves; minced and combined with 1 teaspoon salt
- 1 cup fresh Italian parsley
- 10 tbsp Mamarella olive oil
- freshly grated parmesan
Preparation:
- steam zucchini for 2 minutes
- in a large mixing bowl: combine the zucchini, tomatoes, onion, garlic, bell pepper, parsley, and oil
- cook pasta until 'al dente'
- drain and add pasta to the vegetable bowl tossing until mixed.
- chill salad until cool
- serve with freshly grated parmesan cheese
