Gemelli With Summer Vegetables



  1. steam zucchini for 2 minutes
  2. in a large mixing bowl: combine the zucchini, tomatoes, onion, garlic, bell pepper, parsley, and oil
  3. cook pasta until 'al dente'
  4. drain and add pasta to the vegetable bowl tossing until mixed.
  5. chill salad until cool
  6. serve with freshly grated parmesan cheese
