Mama Coppola's Braciole with Empolese
Ingredients:
- 2 lbs. top round steak or beef roast
- 2 garlic cloves, chopped
- 1/3 cup pine nuts; shelled
- 2 hardboiled eggs, sliced
- 1/2 cup parsley, chopped
- 1/2 tsp oregano
- 2 slices boiled ham, diced
- 1/4 cup parmesan cheese, grated
- 1 cup oil
- 1 cup Mammarella Empolese pasta sauce
- 4 leaves fresh basil, for garnish
Preparation:
- pound two 1 lb. cuts of beef between two sheets of wax paper until thin
- remove from wax paper and lay each slice of meat on a large cutting board or table
- put the following on each slice: half of chopped garlic, half of pine nuts, half of oregano, salt & pepper to taste, hardboiled egg, a sprinkling of parsley, and half of ham cubes. Sprinkle cheese on top of each
- roll beef slice carefully and tie securely with clean white string
- repeat with remaining slice of beef
- fry each roll in hot oil and brown on all sides
- remove from pan and set aside
- heat Mammarella Empolese Pasta Sauce until just bubbling
- on a cutting board, slice beef roll into 1/2 inch slices and arrange on plate
- pour Empolese sauce over beef and garnish with basil leaves
